While white wine is not generally known for agining, Steve's whites are known for aging well.

This unique verical of the 2018, 2020, and 2021 vintages allow for the discerning customer to see the nuances between each of the vintages.

The 2018 is clear and golden with gorgeous floral, apple, and stone fruit aromas, and is sure to delight. Green apple, apricot, and honey flavors are accented by the bright acidity of the wine and a touch of vanilla and coconut at the finish, with everything in perfect balance. Pair with seafood, poultry, shellfish, spicy Thai or Indian food, salads, and light cheeses. From Still Waters Vineyard in El Pomar AVA in Paso Robles, this wine was aged 9 months new American oak. 50 cases produced.

The 2020 is even more refreshing, light, and dry than our previous vintages, with crisp green apple, caramel grapefruit notes, and bright acidity. Kick your feet up on the porch rail on a warm sunny day or enjoy this wine at a backyard BBQ with friends and neighbors. Any way you choose, you can’t go wrong. This is your standard white wine pairing: light white fish, lighter appetizers such as lime shrimp skewers, savory cheese pinwheels, caprese salad, or a lighter cheese plate. Aged one month in American oak, 80 cases produced, sourced from Still Waters Vineyards.

The 2021 is bright and refreshing, with citrus based acidity, notes of honeysuckle, melon, and honeydew with a stone fruit and pear finish. Enjoy this wine at a backyard BBQ with friends and neighbors. Food pairings: light white fish, garlic shrimp skewers, charcuterie plate, or spicy Thai food. Aged one month in American oak, 55 cases produced, sourced from Still Waters Vineyards.
